RARE is a new world-class steakhouse opening in Yerevan, where meat and fire take center stage. We are creating a restaurant that will define the steak culture of Armenia.

We are now looking for a passionate and skilled Sous Chef Butcher, an expert who knows how to work with meat professionally and with inspiration.

Key Responsibilities

• Work with meat preparations: receiving, deboning, cutting, and portioning steaks․
• Deep knowledge of cuts and proper processing techniques․
• Preparation and quality control of the meat block (including dry-aging)․
• Managing the grill and meat station (Josper, robata, open fire)․
• Collaborating with the Head Chef on the meat menu․
• Sharing expertise and training cooks in butchery techniques․

Candidate Profile

• Minimum 2 years of experience with meat and grill in restaurants․
• Strong knowledge of cuts, doneness levels, dry-aging, and storage․
• Skilled in deboning and butchery․
• Confident in working with coal and wood ovens․
• Responsible, precise, and respectful of the product․
